Weekend Recap / What We Ate April 6-12

I know this is super-duper late but I spent a bunch of time this weekend/this week studying for and taking a certification for work. Good news – I passed!

Friday I hung out with my sister and the dogs. Saturday I worked for my step dad’s business and then my mom and I walked to the local fabric store. I was so proud of myself, I walked out with nothing new! My current backlog of sewing projects is embarrassing.

  

M and I took it easy because he was running a trail half marathon the next morning so we just grilled out. Sunday morning involved a 4:45 wake up call for the drive up to Mohican State Park. His race will be getting a post of it’s own but I’m so proud of him [I hurt my calf and didn’t feel comfortable starting] and Mohican is so incredibly beautiful! He was really excited – I promise!

  

Monday 4/6 – buffalo cauliflower
Tuesday 4/7 – spicy chicken mole
Wednesday 4/8 – pasta with spicy sausage in butternut squash sauce
Thursday 4/9 – leftovers
Friday 4/10 – chicken mole tacos
Saturday 4/11 – zucchini casserole + grilled chicken thighs
Sunday 4/12 – tator tot hot dish
