One Pot Chicken Alfredo~Fast Dinner Idea


M requested chicken alfredo and this is what I came up as he wanted something pretty plain. This was a really hearty and filling weeknight supper! But, I think next time it would be great to up the garlic and add in some red pepper flakes 🙂chicken alfredo2

You’ll need:

2 tbsp olive oil
1 lb chicken breast, cubed into 1 in. cubes
2 garlic cloves, minced
14 oz low sodium chicken broth
1 cup cream or half and half
1/2 pound of penne or other short cut pasta
2 cups freshly grated real parmesan
salt and pepper to taste

Heat olive oil in a deep sided pan over medium high heat. Add in chicken and brown on each side. Add in the chicken broth, cream and dried pasta. Bring to a boil and then reduce to a simmer and cover. Let cook for 15 to 20 minutes, until pasta is tender and chicken is cooked through. Remove from heat and stir in shredded cheese. Season to taste with salt and freshly ground black pepper.
