This is another one of our favorite things to make with wild rice. M’s dad got a [more authentic] version of this recipe from a group of local high schoolers. I did change it up a bit by adding more veggies and switching out the Miracle Whip for yogurt. The flavor of this salad is out of this world good. But this is church pot luck food…not that we haven’t eaten most of a batch as dinner. Because we have.
2 cups cooked wild rice
2 cups cooked and cubed chicken
1 cup diced celery
1 cup red grapes, halved if they’re really big
20 oz can pineapple tidbits, drained
1/2 cup cashew halves
1/3 cup finely chopped red onion (optional, feel free to use less too)
1 cup yogurt
1/2 cup 1000 island dressing
Toss everything together. It does taste better if you let is chill in the refrigerator, but we don’t usually make it that long!
