Homemade Black Bean Burger

Guys! I take back every time I’ve ever said anything good about black bean burgers in restaurants. I’m never going out for one again. These are stupid easy to make and they freeze well. This recipe makes four burgers and when I made them, I froze two thinking we’d have them for another dinner. How wrong I was. I made these in a skillet (with a lid) from frozen the following two days for lunch. Go get on these.

You’ll Need:
1 15 oz. can black beans (or 1 1/2 cups cooked black beans)
1/4 cup minced onion
1/4 cup fresh cilantro
1 tbsp minced garlic
2 tsp soy sauce
1/2 tsp salt
1/4 tsp freshly ground pepper
1/4 cup panko
1 large egg, lightly beaten
cooking spray

4 hamburger buns
1/4 cup mayo or greek yogurt
1 tsp sriracha (or more to taste)
juice from one lime
2 cups baby arugula

Preheat over to 425. Place beans in a large bowl, lightly mash. Stir in onion, garlic, soy sauce, salt, pepper, panko and egg. Divide into four portions and then form into patties about 1/2 inch thick. Spray a baking sheet with cooking spray and plan patties on sprayed sheet. Bake for 8 minute, flip and cook for 6 minutes more. While burgers are cooking, whisk together mayo (or greek yogurt), sriracha and lime juice. Toast buns. Put spicy mayo on both sides of the bun, add burger, top with 1/2 cup of arugula.
