I know, I know. No one needs a recipe for french fries, but I’ve been thinking about doing something yummy with potatoes since some lovely ladies mentioned these pretty potatoes.
about 1 large russet potato per person
one teaspoon olive oil per potato
salt and pepper
Italian herbs, optional
Slice the potatoes into 1/3 inch sticks. Place in a large bowl and let sit for 30 minutes to an hour. This draws out a lot of the starch, which is important because I don’t like to fry them and this gets them more crispy in the oven.
Preheat the oven to 425. Take potatoes out of the water and pat dry with a clean dish towel (or paper towel). Spray a cooking sheet with cooking spray. In a large bowl, toss the potatoes in olive oil, salt, pepper and italian herbs. Spread evenly in one layer and bake until crispy, about 35 minutes. Make sure to turn once. Serve immediately 🙂
