Catfish Po’Boys

You’ll Need:
2 hoagies or about half a baguette
2 4 oz catfish fillets
1/2 cup corn meal
1 to 2 tbsp cajun seasoning
oil for frying
1/2 cup cole slaw, for serving
lemon wedges, for serving

You’ll:
Mix the corn meal and cajun seasoning together in a plate or a shallow dish. Thoroughly coat each fillet in the seasoned corn meal while the oil heats up. Fry the fillets in a 1/4 inch to 1/2 inch of oil, about 6-9 minutes a side, depending on the thickness of your fillet. Serve on toasted baguette, topped with cole slaw and lemon.
