This is very good on top of the blueberry vinaigrette and kale salad, but I’ve also done this alone when I’m looking for something more ‘snacky’ or put it on top of stir fried veggies too! It does take a bit of work but it isn’t that bad if you’ve got all the players in the kitchen, and I usually do!
12 oz. firm tofu, well drained and squeezed
2 tbsp oil (olive, sesame or vegetable)
1/3 cup miso (I usually have yellow or white)
3 tbsp rice vinegar
3 tbsp water
2 tbsp sugar
2 tsbp milk (I typically have rice milk)
1 tsp freshly grated ginger
1 tsp freshly grated garlic
Preheat broiler. Combine everything except the first two ingredients in a blender or food processor. Slowly add the oil until the miso sauce becomes emulsified. Slice tofu into squares, about 1/3 to 1/2 inch thick. Baste each tofu square with the sauce. Broil for 8 to 10 minutes and then flip and baste again. Broil an additional 8 to 10 minutes.
