This salad was super fast and a really healthy weeknight supper. Simply massage the salad dressing into the pound of kale to completely cover the kale with dressing. The dressing works its magic on the kale and it begins to soften into the most yummy thing, ever.
This is my miso baked tofu squares that I popped on top!
In a blender, or with an immersion blender mix together:
1 cup fresh blueberries
1/3 cup balsamic vinegar
1/3 cup olive oil (the best you’ve got)
1 teaspoon salt
freshly ground pepper to taste
