Slice and Bake Oatmeal & Raisin Cookies

I made these to bring a friend’s who had us over for their famous chili. Three more rolls are hanging out in my freezer. This dough is pretty good frozen too 🙂

Makes 4 rolls of 12 cookies.

You’ll Need:
2 cups white/all purpose flour
1/2 tsp baking powder
1/2 tsp baking soda
1/2 tsp salt
1/4 tsp cinnamon
1/8 tsp nutmeg
1 stick unsalted butter, room temperature
1 cup light brown sugar
1/2 cup white sugar
2 eggs
1 tsp vanilla extract
2 cups old fashioned oats
2 raisins

You’ll:
In a medium bowl, combine the flour, baking powder, baking soda, salt, cinnamon, and nutmeg. In a stand mixer on medium speed, cream together the butter, brown sugar and white sugar. Add both eggs one at a time, scraping down the sides between eggs. Add in the vanilla. Reduce to low and slowly add the dry ingredients. Once just combined, stir in the oats and raisins. Divide into four equal parts and on parchment paper, gently roll into tubes. Freeze for at least 4 hours and up to 4 weeks.

To Cook:
Preheat oven to 350 and slice into 1/2 inch rounds. Bake until edges are golden, about 15 minutes.
