TVP Tacos

I am so shocked I’ve never made these tacos before. We bought a big bag of TVP (texturized vegetable protein) for another recipe and I was looking for a way to use it up before it went bad. Well now, I have a reason to buy it again! These are a really quick weeknight meal.

Makes 12 tacos (how many people that is, well depends on how hungry you are!):
1 cup water
1 cup TVP
1 packet taco seasoning
1 tbsp soy sauce
2 tsp olive oil
1 bell pepper, finely diced

Heat the water in a medium skillet until just boiling and add the TVP. Turn the heat to low and let cook for 2-3 minutes, until the TVP is reconstituted. Add soy sauce, oil, taco seasoning, and pepper. Cook 3-5 minutes more until pepper is tender-crisp. Remove from heat.

To serve:
Heat tortillas directly over a gas burner, turning frequently. Spoon TVP taco filling into shells and top with your regular taco fillings, we like salsa and fresh cilantro.
