Healthy(ish) Breakfast Muffins

I’ve been trying to arm myself some better morning and breakfast recipes. This is one of those pinterest finds I’ve adapted to make it work for me.

I used:
2 eggs
2 cups unsweetened applesauce
1 banana
1/2 cup brown sugar
1 tablespoon vanilla extract
2 teaspoons cinnamon
1/2 teaspoon dried orange peel
1/4 teaspoon nutmeg
3 teaspoons baking powder
1 teaspoon salt
4 cups old fashioned oats
2 cups milk
1/2 cup sliced almonds
1/2 cup dried cranberries
1 cup blueberries

Mix first 8 ingredients together and then add remaining items. Make in muffin tins at 350 for about 20 minutes each. I tend to freeze half of each batch so they last 2 weeks-if M doesnt’ eat them all first!
