I am really truly grateful for my internet friends-we challenged our selves to a month of crock pot cooking in November and now we are attempting a month of packed lunches! I’m so excited because I know that eating right is so important to helping me manage holiday stress-but it is usually the first thing I chuck out the window.
This is a super simple recipe I threw together, but I plan on making a batch each week, with whatever veggies we have in the house.
I just cooked some garlic, onion, and carrot together until soft in 1 Tbsp olive oil until soft. I then added sliced carrots, 1 sliced zucchini, some cabbage (because I made cole slaw), spinach and a sliced green pepper. I topped it of with about 4 cups broth and some crushed tomatoes (which promptly fell apart-I’d recommend tomato paste). I let it simmer about 20 minutes (hint: until I was hungry). It was the only thing I could think of that didn’t involve a blender-all my other soups do!
