When we got another big bag of collard greens in our weekly CSA I knew I wasn’t going to let M put them in a salad (not that it wasn’t tasty). But they were just calling out to me, cook me, cook me. I just sauteed them in some diced green onions (because we were out real onions, ok?) and garlic with olive oil. When it came out of the pan I sprinkled parmesan on top. I assume, for most people, this is a side dish. But I just plopped it in a bowl and called it supper. They are so flipping good! So good.
I get it. Kale is having a moment. But look at this yumminess!
