We have been struggling to find a variety of meatless options we both like for Meatless Monday. This is adapted from several stir fry recipes I found and I think it was such a winner, we’ll make it again! We just cut up 14 oz tofu (after wrapping the whole block in a towel and wringing out the extra water) and rolled it in flour. We pan fried the tofu and then set it on a plate with paper towels to drain off extra oil.
I love to buy the ‘julienned veggie mix’ at Trader Joe’s because you get such a variety of already cut-up veggies for less than you could buy them whole. I also added a leek to the mix because we had it. Then we added the sauce and about a cup and a half of cooked rice. We had limes so I added a bit of lime juice to mine, M not so much.
For the sauce:
1/3 cup soy
1/3 cup hoisen sauce
1 heaping tablespoon sriracha
about 1/2 inch of ginger (I grated it directly into the pan)
The key that I took forever to learn is to have the pan HOT. Really hot.
