Meatless Monday Version 1

We have been trying to get more dedicated to eating meatless on Mondays. Mostly we have been eating stir frys and mac ‘n’ cheese. This week we made something more seasonal- Acorn Squash Gratin and Spatzle w/Garlic. The squash came from our CSA and was oh-so-yummy.
halved acorn squash 
cooked and scooped out flesh
squash plus black pepper, sage and garlic then i topped it w/gureye & breadcrumbs 
squash gratin & spatzle w/garlic & dill
the smell of fall-apple pie filling
